I've found there's stunning scenery and beautiful beaches in almost every country I've visited. But I'd dispute about being unlucky with the weather in the UK; I'd say you need to strike lucky to get great weather here. Darren said that Kent gets 30c and sun every summer; not for weeks and weeks on end it doesn't. And the sea around the UK never gets anything like warm.
For my holiday, I want to be almost guaranteed hot and sunny. Days where you can't bear being in the sun for that long and need to jump in the pool for a bit, then dry in minutes in the sun when you get out, before repeating the process. All lubricated by copious alcohol, before going out to a nice eatery on a night in shorts and shirt, before returning late and it still being well into the 20's.
My two favourite places in the world are Devon and the Lake District, and in Devon especially we've had some days where the temp's been in the late 20's and it's been fantastic (still a cold sea!). But far more days have been a chilly 20c or below, with many days having at least some horrible rain.
